Tableya is produced by roasting the cacao beans and separating their skin, and grinding the seeds to achieve a soft and smooth texture and paste-like consistency. For Guilang Tableya, this is then molded by hand into chocolate tablets.
Sikwate (Filipino Hot Chocolate)
A traditional Filipino chocolate delicacy, this rich hot chocolate drink is well-loved by many Filipinos because of how much you can taste the pureness of the cacao. No sweet artificial flavor!
What You Need
1 cup Water | 2-3 Tableya discs
How to Make
1) In medium-low heat, whisk together 1 cup water and 2-3 tablets until they fully dissolve
2) Pour into a cup to serve!
3) Optional, add sugar or evaporated milk
There’s nothing more traditional than a Champorado made with pure cacao. Make your Lola proud with this recipe from Guilang Tableya themself!
What You Need
5 cups Water | 4 Tableya Discs
1 cup Glutinous Rice | 1/2 cup Sugar
1/2 cup Evaporated Milk
How to Make
1) In a deep pot over medium heat, add water and bring to a boil. Add rice and stir to distribute. Lower heat and continue to cook, stirring occasionally, until rice begins to expand.
2) Add tableya and cook, stirring regularly, until chocolate has melted.
3) Continue to cook until rice is translucent and liquid is reduced to desired consistency. Add sugar and continue to cook, stirring regularly, until dissolved.
4) Ladle onto bowls, drizzle with evaporated milk and serve hot.
5) Optional but highly recommended: Add dried fish!
If brownies and cookies had a baby, it would be crinkles! Bake chocolate crinkles with Guilang Tableya for a soft, decadent taste.
What You Need
2 pcs Tableya | ¼ tsp Salt | 2 Eggs
1 cup All-Purpose Flour | 1/4 cup Canola Oil
1 tsp. Baking Powder | 1 tsp. Vanilla Extract
1/3 cup Powdered Sugar
How to Make
1) Preheat oven at 350F.
2) Heat tableya in the microwave for 20 seconds or until just melted. Set aside. Sift together flour, baking powder, and salt. Set aside.
3) Combine sugar, Canola Oil, and vanilla. Beat/ whisk until well blended. Add eggs one at a time while beating.
4) Add melted tableya. Gradually fold in flour mixture. Cover and chill for 4 hours.
5) Scoop a tablespoon of mixture into balls. Roll in powdered sugar and arrange in a greased baking pan, 2 inches apart. Bake for 10 minutes.
