Description

Jeju Traditional Fermented Fish Sauce is a famous Korean national treasure; it is made by fermenting fish sauce made with sashimi grade jack mackerel and young mackerel caught in the clean waters of Jeju Island. It is not simply a fish sauce, it is a double fermented flavoring sauce, often named “Magic Sauce”. No additives or chemical processes made from GMO and wild caught mackerels from Korea. This product is best used in flavoring soups, stews, banchan vegetables and in lieu of salt for umami packed saltiness and sweetness.

Double fermented, this process takes a total of 3-years. Jeju wild caught jack and young mackerel are caught from May and November, before the mackerels become too fatty, and fermented for 15 months until the flesh breaks down from the bones. This filtered reddish liquid between the bones bottom layer and top fat layer is the fish sauce that is extracted for a double fermentation process. The second fermentation phase takes roughly another 2-years in earthen pots by mixing the extracted fish sauce with GMO daikon from local Jeju farms, kelp from Wando, and Jeju mandarins (Hallabong), and 3-year sun-dried sea salt from Shinan. The daikon and mandarins prevent this fish sauce from pungency, leaving a clean, umami filled sauce that elevates and adds a touch of piquancy to dishes.

The duo behind Haeeorim, Sooncheon Moon and Sookyoung Oh, were born and raised on the beautiful island Jeju, Korea. They continue carrying the legacy of creating Korea's representative fermented fish sauce from recipes and processes steeped in tradition, handed down from generations. Not believing in cutting corners, they carry on the tradition of utilizing sashimi grade jack and young mackerel from Jeju and purified Jeju sea salt to extract umami flavors from whole ingredients found on the island, including 3-year air dried sea-salt.
