Jeju-grown green barley is a unique type of colored barley cultivated in pristine Jeju. Green barley is sometimes mixed with rice to make rice dishes, and it is also used in baking and confectionery by blending it with wheat to enhance lysine content. 

Rich in minerals, vitamins, and dietary fiber while being low in calories, it contains five times more dietary fiber than regular rice.

Green barley rice is developed by Korea’s Rural Development Administration along with black, purple and blue barley. 

It is a distinctive type of colored barley, boasting abundant dietary fiber compared to other barley types and characterized by its rich, nutty flavor.

Adding about 20-30% green barley rice to regular rice and thoroughly soaking it before cooking can make the rice taste even smoother and more tender.
