Tsar Nicoulai Caviar - Siberian Sturgeon (Greece)
Acipenser baerii is a river sturgeon, found in Siberia. Inhabits deep parts of large rivers, with moderate to swift current. Acipenser baerii can live up to sixty years and usually weighs less than 65 kgs.
Noted for its gray to black color, small to medium grain size, and a unique sweet brine finish. Baerii caviar is a great entry level product that works wonders stand alone or incorporated as a topping on seared scallops or sautéed fish.
