Nikaido- Sendai Spicy Miso Ramen

We use Sendai miso made by Yamakano Brewery, a long-established brewer that has been in Tome City for over 100 years. The Sendai miso is made with the flavor of soybeans and mixed with chili peppers. The deep, rich, mildly delicious flavor is combined with a tangy spiciness to create a deliciously spicy soup that lingers in the mouth.
The soup is complemented by our signature dried Chinese noodles. The noodles are dried and aged for a long time to give them the smoothness, firmness, and texture of fresh noodles, and to bring out the flavor of the wheat.
