From quesadillas to teas, epazote is a popular leafy green from Mexico. It is also kown in English as Goosefoot or Mexican Tea for its beneficial digestive qualities. Popular in Mexican and other Latin American dishes, epazote adds a musky flavor. Some call it rustic, some call it strong. While its young shoots and tender leaves are used in soups, its mature, pungent leaves are commonly added into bean and corn dishes.
