Matki or moth bean is a small, brown-colored, oblong-shaped bean, which is very common in Indian cuisine. To sprout the matki, first, it has to be sorted to remove stones, washed, and then soaked in water for 6-8 hours. It has high antioxidant levels which reduce the risk of catching infections. *It is a rich source of magnesium, fiber, and potassium which helps reduce blood pressure. *It is also considered to lower cholesterol levels.
