Anchovy sauce is widely used in Korea in a variety of dishes, often as a substitute for soy sauce to add complexity and depth to the flavours.
The most well-known dish that uses fish sauce as a key ingredients is Kimchi. From the most popular cabbage kimchi to lesser known radish or spring onion kimchi, all types of kimchi traditionally use fish sauce as a key ingredient.

- Fresh Cabbage Kimchi [겉절이]
1. Combine a whole napa cabbage with a tablespoon of salt and leave for 30 minutes.
2. Drain the water and add 10 tbsp of fish sauce, 5 tbsp of sugar, 5 tbsp of chilli powder and some minced garlic.
3. Mix well to combine.
