Gyokuro is a tea grown under the shade. Tea plantations are covered for about 20 days to block direct sunlight. This method aims to suppress the conversion of amino acid (umami) into catechin (astringency). It results in a tea with a lot of flavor (umami).
A low in astringency Uji gyokuro even brewed with hot water. This Japanese green tea features a refined scent with a lingering refreshing aftertaste.
