Raw tapioca starch is preferred as the particles are uniform and plump without impurities. It is easy to cook, crystal clear, and soft and smooth after cooking.
- Cooking methods:
1. Prepare 6:1 ratio of water and sago
2. Pour the water into the pot and boil, then add the sago and cook for about 15-18 minutes, stirring occasionally to prevent adhesion
3. After turning off the heat, leave the sago in the hot water until transparent (about 20 minutes)
4. Rinse with cold water
