Brewing Tips
Phoenix Dan Cong tea is typically highly aromatic and is best brewed using a lidded bowl. Use about 10 grams of dry tea and brew it with boiling water at 100°C. Use the lid to scrape off any foam that floats to the surface. The first infusion is for washing the tea and is not meant for drinking; pour it out immediately after adding water. The second infusion should last 20 seconds, the third for 30 seconds, and subsequent infusions as desired. Due to the robust veins of Phoenix Dan Cong tea leaves, they are highly resistant to brewing, allowing for 45-50 infusions if brewed as Gongfu tea.
