Hot summer days call for a cool treat, such as this Shibata Black Yuzu Sake. Shibata Brewery's water source is from the mountains that cascade right behind the distillery, which plays a big part in crafting a delicate sake. The organic Yuzu fruit used is from Shibata's local farm, and the sake itself is made with a junmai sake base and Ginpu rice from Hokkaido. Yuzu's skin is left on when squeezed, so the juice will be pleasantly tart without being too sweet.
