Tigaktae-gak is a dialect for "tiff, tiff, tiff," and the name is reminiscent of a tiff, tiff, tiff fight as the pieces crumble and chew. The secret to the crispy texture is that the dried Korean seaweed is coated with glutinous rice paste, aged, and then deep-fried in corn oil.
