Gyokuro is a tea grown under the shade. Tea plantations are covered for about 20 days to block direct sunlight. This method aims to suppress the conversion of amino acid (umami) into catechin (astringency). It results in a tea with a lot of flavor (umami) and heavy sweetness.
This tea particularity is its green dried seaweed-like scent and its mellow aroma and flavor that spreads in the mouth.
