Mizunine combines leeks, onions, and mussels with dozens of other ingredients, including squid and a variety of spices, and slowly simmers them for eight hours.
During the simmering process, the flavours and aromas are concentrated and the broth is deeply flavoursome.
You can dilute it with water to make a stock, or use it like a flavoured soy sauce to season your food. It's a simple way to enhance the flavours of a variety of foods, from noodle soups such as jaji noodle soup, seaweed soup, and fish cake soup to stir-fries.
